Edamame Hummus
http://yogapeach.com/?p=2475

1/2 pound frozen shelled edamame (green soy beans)
    2 cloves chopped fresh garlic
    1 TBSP tahini
1 large lemon or lime, squeezed juice
    1/4 cup water
    dash sea salt
    dash ground cumin (optional)
    dash ground coriander (optional)
Add olive oil if you’d like, I didn’t use any but I’m sure would add nice flavor and texture

Directions: In a food processor or cuisinart, puree the edamame, tahini, water, lemon or lime juice, garlic, salt, cumin, and coriander until smooth.

Transfer to a small bowl, chill 10 minutes. Serve with the vegetables, chips, or on bagel thins., Refrigerate up to two days.

Optional: Some recipes say to boil the beans in salted water for 4 to 5 minutes, or microwave for 2 to 3 minutes before pureeing. I’ll try this next time, it may provide an extra smooth texture. Either way, I loved the edamame hummus just the way I made it!
